And this, the 4th meaning, is what they are. People who want to do things in their own way, no matters what other say. They are, trully, outsiders.
Marta and Germán are some kind of out-of-the-law restaurateurs, a sommelier (she) and a chef (he) that like to getting things done in any other way. Looking for rare wines, advising differently, cooking the same recipe but without getting the same plate. This is Almarge. A different place in a different location doing things in a different way. That's why we say they are «genuine outsiders». And, yes, also the name is about them (Mar for Marta, Ge for Germán), about their past (Al is for their previous job, Alkimia and Alkostat) and about what they do (Almarge is the Catalan expression for "apart from"). A total statement. A real purpose. A clear philosophy.
